Jerez is a very busy airport with a large flying school and commercial traffic, so the approach can be a bit hectic.
Handling is mandatory for all GA operations, but you get the service for 18€ if you choose the right words and the right handling agent. There is a very valuable checklist on how to proceed in Spain where handling is mandatory:

So you have to request the „Servicio de acompañamiento en plataforma“ with South via email (xrykp@southeu.com) and have them confirm the price.
Furthermore, a ramp slot has to be requested to the airport (CEOPS) by email (CoordinadoresJerez@aena.es). Before you leave, you can pay the AENA fees (landing, parking and some minor stuff) in their office in the first floor. It was something around 100€ for a Mooney for 4 days. AENA parking fees are hefty, but you can easily rent a car for cheap (at least in low season) in Jerez and explore the area. We went to Sierra de Grazalema with its white villages and some great hiking and liked it a lot.
Once the AENA fees are paid, go out to the gate where you were dropped off on arrival and call South for the pick-up.
In our case, something remarkable happened then. The driver sent by South to us to the plane without processing the payment of the 18€! At several other airports we visited before they came with the invoice and the credit card reader and took us to the plane once payment was done. Here we asked the driver and he said he was just told to pick us up and take us to the plane and he assumed the payment had been done in the office before. No, we said- he didn’t care and called it a “regalito”, a small present :-)

LEJR requires mandatory handling and prior permission (PPR), with slot coordination needed at least three hours in advance. Handling agents include Universal Aviation Spain, Iberia Airport Services, and Andalucia Aviation Services; handling must be arranged in advance and the chosen handler should be specified in the flight plan. Contacting Universal Aviation Spain via their central email yields faster responses than AIP-listed addresses. Separate contact is needed for parking (AENA) and handling (e.g., Iberia). For Schengen entry from Gibraltar, both AENA and Iberia must be emailed in advance. Procedures require waiting for the handling agent before disembarking unless specifically permitted by ATC.
Handling fees for small GA typically cover transfer to the terminal; examples range from about €20 to €200 depending on agent and services, with most recent examples around €20–€200. Example: landing fee about €50. Parking is typically about €20 per day. Some agents offer more comprehensive service at higher cost (e.g., Andalucia Aviation about €60). Fees are paid separately to handling agents and airport authorities.
Fuel is available by bowser, payable by BP card, sometimes cash or Shell card; Visa/Mastercard may not be accepted. Fuel prices are higher than in much of Europe but typical for Spain. Transport between the GA apron and terminal is provided, as walking distances can be long; allow 7–15 minutes on foot if walking is necessary. Security procedures can be bureaucratic, requiring a stamped flight plan copy for access through security channels.
Facilities include a flying club restaurant and maintenance support from Flight Training Europe if needed. Rental cars are available at the airport; booking online is recommended for better rates.
The airport is busy at times due to flight training activity but generally GA-friendly with professional ATC and efficient ground services. Customs and immigration are available for international flights; procedures may be strict when arriving from outside Schengen or Morocco.
